Sugar-free Mocha Mousse

2 cups heavy whipping cream
6 ounces sugar-free chocolate bars
½ cup coffee, cooled
1 teaspoon coffee extract
Whip cream in a mixer until stiff peaks form and set aside. Melt chocolate in a microwaveable bowl or over low heat on the stove in a saucepan. Add coffee and coffee extract to melted chocolate and mix well. Pour chocolate mixture into whipped cream and stir until well combined. Refrigerate for 30 minutes to thicken mousse.
